Resumen : | Las zanahorias blancas (Arracacia xanthorrhiza bancroft), amarilla (Arracacia xanthorrhiza), y, camote morado (Ipomoea batatas lam), son tubérculos que poseen grandes propiedades nutricionales y son poco estudiados como; fuente de energía, vitaminas, minerales, proteínas, carbohidratos y azucares esenciales en la dieta humana y principalmente de compuestos funcionales como fenoles, flavonoides, antocianinas, entre otros. Por lo mencionado la presente investigación está enfocada, al estudio de polifenoles totales y actividad antioxidante de dos variedades de zanahorias (Arracacia xanthorrhiza), y, camote morado (Ipomoea batatas lam) en el Cantón Guaranda - Provincia Bolívar con tres métodos de extracción (solventes orgánicos, soxhlet y fluidos supercríticos). Se caracterizó los extractos obtenidos mediante cromatografía gaseosa acoplada a un detector de masas (GC-MS), donde se identificaron entre 22 y 38 compuestos, los compuestos identificados pertenecen a grupos funcionales de polifenoles, antioxidantes, aldehídos, esteres, azucares, ácidos, carbohidratos, fármacos y alcoholes. Se evaluó la concentración de polifenoles totales (TPC) mediante el método de Folin-Ciocalteu y la actividad antioxidante mediante los métodos de ensayo de actividad antioxidante total (ABTS), poder antioxidante reductor férrico (FRAP) y actividad de captación de radicales (DPPH) de los extractos. Los datos obtenidos muestran que la mejor matriz con mayor concentración de polifenoles totales y actividad antioxidante fue el camote morado en el extracto por fluidos supercríticos con valores de 73,57 mg ácido gálico/100 gramos de muestra, 807,17; 372,10 y 630,79 µmol Trolox/g muestra respectivamente. |
Descripción : | White carrots (Arracacia xanthorrhiza bancroft), yellow (Arracacia xanthorrhiza), and purple sweet potato (Ipomoea batatas lam), are tubers that have great nutritional properties and are little studied as; source of energy, vitamins, minerals, proteins, carbohydrates and essential sugars in the human diet and mainly of functional compounds such as phenols, flavonoids, anthocyanin’s, among others. Therefore, this research is focused on the study of total polyphenols and antioxidant activity of two varieties of carrots (Arracacia xanthorrhiza), and purple sweet potato (Ipomoea batatas lam) in Cantón Guaranda - Bolívar Province with three extraction methods (solvents organic, soxhlet and supercritical fluids). The extracts obtained were characterized by gas chromatography coupled to a mass detector (GC-MS), where between 22 and 38 compounds were identified, the identified compounds belong to functional groups of polyphenols, antioxidants, aldehydes, esters, sugars, acids, carbohydrates, drugs and alcohols. The concentration of total polyphenols (TPC) was evaluated by the Folin-Ciocalteu method and the antioxidant activity by the test methods of total antioxidant activity (ABTS), ferric reducing antioxidant power (FRAP) and radical scavenging activity (DPPH). of the extracts. The data obtained show that the best matrix with the highest concentration of total polyphenols and antioxidant activity was the purple sweet potato in the supercritical fluid extract with values of 73.57 mg gallic acid / 100 grams of sample, 807.17; 372.10 and 630.79 µmol Trolox / g sample respectively. |
