Resumen :	La presenta investigación se realizó en la ciudad de Guaranda la cual pertenece a la provincia de Bolívar y se enfocó en analizar la gastronomía ancestral y su influencia en el desarrollo turístico en la ciudad. La metodología que se empleó es de tipo exploratoria y descriptiva, con un enfoque mixto a través de la aplicación de entrevistas y encuestas como método para la recolección de la información para la obtención de las preparaciones ancestrales más importantes que posee la ciudad de estudio, así mismo para determinar la influencias que estas preparaciones tienes en la actividad turística. Los resultados derivados de la investigación muestran 22 preparaciones ancestrales que caracterizan a la ciudad de Guaranda y su patrimonio, además se determinó que dichos platos no tienen la influencia necesaria para motivar la visita de los turistas, sin embargo es posible establecer la gastronomía ancestral como una nueva alternativa para dinamizar la actividad turística con el fin de mejorar la oferta que tiene la ciudad. Por este motivo se creó un manual gastronómico ancestral que contendrá la información necesaria sobre aquellos platos que relatan a la ciudad y de este modo cualquier visitante podrá conocer y preparar la diversa gastronomía que esta zona tiene, posteriormente a esto se concluye que la aplicación de este manual en lugares estratégicos ayudará a salvaguardar y rescatar estas tradiciones. Descripción :	This research was conducted in the city of Guaranda, which belongs to the province of Bolivar, and focused on analyzing the ancestral gastronomy and its influence on tourism development in the city. The methodology used was exploratory and descriptive, with a mixed approach through the application of interviews and surveys as a method for the collection of information to obtain the most important ancestral preparations that the city of study possesses, as well as to determine the influence that these preparations have on the tourist activity. The results derived from the research show 22 ancestral preparations that characterize the city of Guaranda and its heritage, it was also determined that these dishes do not have the necessary influence to motivate the visit of tourists, however it is possible to establish the ancestral gastronomy as a new alternative to energize the tourist activity in order to improve the offer that the city has. For this reason an ancestral gastronomic manual was created that will contain the necessary information about those dishes that tell the story of the city and in this way any visitor will be able to know and prepare the diverse gastronomy that this area has, after this it is concluded that the application of this manual in strategic places will help to safeguard and rescue these traditions.
