We mentioned important aspects such as: the potential of the country and the province in terms of biodiversity (crop and livestock), underlying motivation of small producers to organize themselves and start working on milk production and processing of products. This activity is protected in the Constitution of the Republic of Ecuador 2008 and the National Plan for Good Living 2008-2013. The collection of information was through the data provided from the directory and administrator of milk collection centers and rural cheese factories of Canton Ambato, according to the hypothetical - deductive method and applied basic research, which enables diagnosis and analysis of the situation of the administration of these organizations; since the implementation of the New Management Model Management is suggested as a tool to improve their management process. The proposed New Model of Administrative Management in milk collection centers and rural cheese, focuses on the development of key strategies for proper planning and organization of resources; direction and control in the execution of its procedures, improve policies, training of human talent and technological implementation
